The numbers you reported are the percentage of residents 75 and older within a race/ethnicity that have been vaccinated. So, 49.3% of all African American residents 75 or older in Santa Clara County have been vaccinated. Instead, you reported that 49.3% of all adults 75 and older who received at least one dose are African American.
If you were looking for those numbers, my calculations are that among adults 75 and older who have been vaccinated in Santa Clara County, 1.35% are African American, 30.21% are Asian, 8.07% are Hispanic/Latino and 47.45% are White. (Based on SCC Public Health Data for March 24, 2021).

Stats can be confusing, but if you read it carefully -- the article explains the difference in the last two paragraphs. Per administered vaccine, and per capita by race.
